BACON & AVOCADO MUFFIN
This is great for a weekday breakfast. Not only will it boost the start to your day it is quick & easy with only 3 steps and 4 ingredients.
FUN FACT - The English muffin was invented by an English man Samual Bath Thomas in 1874 but he lived in the Unitied States in Plymouth.
Serves 2
5 minutes prep & cookiing time
EQUIPMENT Frying Pan, Knife, Toaster, Tablespoon
INGREDIENTS 2 Rashers Bacon 2 English Muffins 2 Tablesppon Mayonnaise 1 Ripe Avocado 2 Eggs (optional)
LET'S COOK
1. Preheat a non-stick frypan on medium high heat. Cook the bacon 2 minutes on each side. (if you are including an egg add these to the pan as well) 2. In the meantime halve the avocado, remove the stone. Toast the muffins until golden. Spread mayonnaise on the muffin tops. 3. Slice the avocado and place on the bottom half of the muffins along with the bacon (and egg if are including it). Serve immediately
