BANANA & COCONUT TART

INGREDIENTS 3 Bananas 2 Tbsp Caster Sugar 3 Tbsp Desiccated Coconut 1 Pre Made Pastry Case FOR CUSTARD 4 Large Egg Yolks 1/3 cup Caster Sugar 1 Tsp Vanilla Extract 2 Tsp Cornflour 1 3/4 cup Milk 3 Tbsp Desiccated Coconut
LET'S COOK
1. Pre-heat oven to 200 (180 fan) gas 6 2. To Make the custrard - whisk together the egg yolks, sugar, vanilla extract & cornflour. 3. Heat the milk with the coconut almost to a simmer, then gradually whisk it into the egg mixture. 4. Pour the custard back into the saucepan and cook over a meduim heat stirring constantly until mixture thickens. 5. Pour into the pastry case, slice the bananas and arrange on top. 6. Mix together the caster sugar and coconut and sprinkle it over the top. Place the tart in the oven for 10 minutes to brown the top. 7. Leave to cool before slicing.
