These are great for a quick dinner instead of Take-away or you can make them the day before and take them for lunch. Great for when the whole family is together and the kids will love putting their own Fajitas together.

EQUIPMENT Glass Bowl, Chopping knife, Char-grill pan or fry pan, Tongs, Serving Platter, 2 small bowls, 2 spoons, plates.
INGREDIENTS
Fresh Chicken Tenderloins 600g ( I buy these instead of chicken breasts as they are already cut up and you get the same amount for roughly the same price.) 3 Cloves Garlic or 3 Tsp Minced garlic 1 1/2 tablespoons vegetable oil 1/4 cup lime juice 2 Red Capsicums 12 Regular Tortillas 1 Lettuce 2 Ripe Tomatoes 1/2 Cup Sour Cream 1/2 Cup Tomato Salsa (depending on your taste buds you can get Mild, medium or Hot)
LET'S COOK
1. Marinade the chicken. Place the chicken tenderloins in the glass bowl add the gartlic, vegetable oil & lime juice. Mix, cover and set in the fridge until you are ready to cook, (I found doing this in the morning is best as the chicken will take on more flavour and be tender). 2. Lightly grease & preheat the Char-grill pan or frypan on medium high, Thinly slice the capsicum discarding the seed and membrane. Cook the capsicum for 3 to 4 minutes turning often until just tender. 3. Increase the heat to high. Drain the chicken discarding the marinade. Cook the chicken for 2 to 3 minutes or until golden and cooked through. 4. Meanwhile shred the lettuce & chop the tomatoes and arrange on the platter, spoon the sour cream & salsa into the bowls and place on the platter. 4. Warm tortillas, following packet directions. Place them along with the chicken & capsicum on the platter. Let everyone assemble their own fajitas.
