Pan Fried Chicken Sandwiches


CHICKEN PAN FRIED SANWICHES

I was home alone on Saturday night wondering what can I cook myself for dinner. so I decided to have a toasted sandwich and tomato soup. A comforting meal for a cold night in. So here is my take on a pan fried chicken sandwich.

Makes 1

EQUIPMENT Butter knife, whisk, shallow bowl, small frying pan, small saucepan, ladle, serving bowl & plate.

INGREDIENTS 2 thick slices white bread 1 tablespoon wholegrain mustard 4 slices tasty cheese Handful baby spinach 50g Shaved Chicken loaf 1 egg 2 tablespoons milk 2 tablespoons butter Can of favourite soup (I chose tomato)

LET'S COOK 1. Spread 1 slice bread with mustard. Top with 2 slices cheese, spinach and chicken, then with remaining cheese and bread. 2. Whisk egg with milk in shallow bowl. 3. Melt butter in frypan over moderate heat. 4. Dip sandwich into egg mixture, turn to coat. Add to pan; cook for 2-3 minutes on each side or until golden and cheese melts. 5. Meanwhile cook soup. 6. Cut sandwich in half. Ladle soup into bowl and eat at once.
